Southwest Salad

This side dish is colourful and flavourful (and not to mention super easy to prepare!)

Serves 4

Ingredients:

3/4 cup corn
1 large tomato, diced
3/4 cup black beans, cooked
3/4 cup zucchini, chopped
1/3 cup red onion, chopped
2 tbsp olive oil
2 tbsp lemon juice
1 tsp dried basil
1 1/2 tsp ground cumin
1/2 tsp sea salt
1/2 tsp black pepper

ingredientsDirections:

1. Mix first five ingredients in large bowl, set aside.

2. Mix remaining ingredient in small bowl. Pour dressing over salad, mix well.

3. Serve.
