Clean Peanut Butter Banana Muffins

Before I started eating clean, banana muffins were my favorite! I didn’t want to have to give them up so I created my own recipe and made them even better – by adding peanut butter!

Ingredients:

1 cup brown sugar
2 cups organic white flour
1/2 tsp sea salt
1 tsp baking soda
1 whole egg
1 egg white
2 large ripe bananas, mashed
3/4 cup natural peanut butter
3/4 cup unsweetened almond milk

Directions:

Whisk together dry ingredients in large bowl. Mix all other ingredients in a separate smaller bowl.

Dry Ingredients Wet Ingredients

Slowly mix wet ingredients into the dry ingredients. The batter should be thick, but if you think it’s too thick you can add more almond milk.

Batter Batter

Preheat your oven to 375 degrees Celsius. Spoon batter into lined muffin pans so they are about 3/4 full. I used two spoon fulls in each muffin cup.

Ready for the Oven

Bake for about 15-20 minutes or until you can pull a toothpick out clean. Makes 24 small sized muffins.
